Ingredients

  • 1½ pounds (680 g) carrots, peeled if desired and cut into 1-inch pieces
  • 2 tablespoons olive oil, divided
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 3 cups (720 ml) low-sodium vegetable broth
  • 1/2 teaspoon ground cumin, optional
  • 1/2 teaspoon fine salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1–2 teaspoons fresh lemon juice, to taste
  • Fresh parsley or pumpkin seeds for garnish, optional

How to make roasted carrot ginger soup

  1. Preheat the oven. Heat to 425°F (220°C). Line a rimmed baking sheet with parchment if desired.
  2. Roast carrots. Toss carrot pieces with 1 tablespoon olive oil and a pinch of salt. Spread in a single layer and roast for 25–35 minutes, turning once, until tender and lightly browned at the edges.
  3. Cook aromatics. Near the end of roasting, warm the remaining tablespoon olive oil in a saucepan over medium heat. Add onion and cook 4–5 minutes until softened. Stir in garlic, ginger and optional cumin and cook another 30–45 seconds.
  4. Simmer. Add roasted carrots and vegetable broth. Bring to a gentle simmer for 5 minutes to combine the flavors.
  5. Blend safely. Remove from heat and blend with an immersion blender, keeping the head submerged to reduce splashes. If using a countertop blender, follow the manufacturer’s hot-liquid instructions, work in small batches and vent safely; never seal a full blender of hot soup.
  6. Season and serve. Add salt, pepper and lemon juice to taste. Warm gently if needed and serve with optional herbs or seeds.

Why roast carrots before making soup?

Roasting encourages browning and concentrates the carrots’ natural sweetness. It adds depth without requiring cream or sugar. Cut pieces to similar sizes so they roast evenly; larger chunks take longer.

How to adjust the texture

For thicker soup, start blending with slightly less broth and add more until it reaches the texture you like. For thinner soup, stir in extra warm broth. An immersion blender gives a rustic texture; a high-powered countertop blender can produce a smoother result when used safely.

Variations

Carrot ginger coconut soup

Replace 1/2 cup of broth with unsweetened coconut milk for a richer texture. Check labels for allergens.

Spicy carrot soup

Add a pinch of cayenne pepper with the cumin, then adjust after tasting.

Orange and carrot soup

Stir in 1 tablespoon fresh orange juice at the end for a subtle citrus note. Taste before adding more.

Extra vegetables

Storage and reheating

Refrigerate promptly in shallow covered containers within two hours of cooking. Store at 40°F (4°C) or below for up to 3–4 days. Freeze in portions for approximately 2–3 months for best quality. Thaw in the refrigerator and reheat until steaming hot throughout, stirring to distribute heat evenly.

Frequently asked questions

Do I need to peel carrots for soup?

No, but scrub them thoroughly under running water. Peeling is optional and can improve smoothness.

Can I make carrot ginger soup without cream?

Yes. Blended roasted carrots create a naturally smooth texture without dairy.

Can I use ground ginger instead of fresh?

Fresh ginger gives the brightest flavor. If using ground ginger, start with about 1/4 teaspoon and adjust to taste.

Why is my carrot soup too thick?

Add warm vegetable broth in small amounts and stir until it reaches your preferred consistency.

Can I freeze roasted carrot soup?

Yes. Cool promptly, portion into freezer-safe containers and thaw in the refrigerator before reheating.
