Greek Chickpea Salad with Feta and Lemon Dressing (15 Minutes)

Greek chickpea salad with feta is a colorful no-cook lunch or side dish made with canned chickpeas, crunchy cucumber, ripe tomatoes, olives and a simple lemon-oregano dressing. This Mediterranean-inspired recipe takes about 15 minutes and works well for lunch boxes, picnics and weeknight meals. It is inspired by Greek flavors rather than presented as a traditional Greek village salad.

Recipe at a glance

Prep: 15 minutes | Cook: 0 minutes | Total: 15 minutes | Servings: 4 as a side or 2 generous lunches | Equipment: Mixing bowl, colander, knife, small jar.

Ingredients

  • 1 can (15 ounces/425 g) chickpeas, drained and rinsed
  • 1 medium cucumber, diced (about 1½ cups)
  • 1 cup cherry tomatoes, halved
  • 1/4 small red onion, finely chopped
  • 1/3 cup pitted Kalamata olives, halved
  • 1/3 cup (50 g) crumbled feta cheese
  • 2 tablespoons chopped fresh parsley, optional

For the lemon dressing

  • 2 tablespoons extra-virgin olive oil
  • 1½ tablespoons fresh lemon juice
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1 small garlic clove, finely grated
  • 1/4 teaspoon freshly ground black pepper
  • Salt to taste, starting with a small pinch because feta and olives are salty

How to make Greek chickpea salad

  1. Prepare the chickpeas. Drain canned chickpeas into a colander, rinse under cool water and shake off excess moisture.
  2. Chop vegetables. Dice cucumber, halve cherry tomatoes and finely chop red onion. Slice olives if needed.
  3. Mix the dressing. Add olive oil, lemon juice, red wine vinegar, oregano, garlic and black pepper to a small jar. Close and shake until combined.
  4. Combine the salad. Put chickpeas, cucumber, tomatoes, onion and olives into a large bowl. Pour over the dressing and toss gently.
  5. Add feta. Sprinkle feta and optional parsley over the top. Fold once or twice so the cheese does not break down completely.
  6. Taste and serve. Taste before adding salt. Serve immediately or chill briefly until ready to eat.

How to keep chickpea salad fresh and crisp

Drain the chickpeas thoroughly so the dressing is not diluted. If your cucumber has a very watery center, scoop out some seeds before chopping. Add feta close to serving time for a tidier presentation. If preparing the salad several hours ahead, store the dressing separately and combine shortly before serving.

Ingredient substitutions

Make it dairy-free or vegan

Omit feta or use a suitable plant-based alternative. Check product labels for allergens.

Use a different bean

Cooked white beans can replace chickpeas, although the texture will be softer.

Make it more filling

Serve over cooked and cooled quinoa or with whole-grain bread. Keep prepared grains refrigerated until serving.

Reduce onion sharpness

Soak chopped red onion in cold water for 5 minutes, then drain well before adding.

What to serve with chickpea salad

This salad pairs with honey garlic chicken skewers or a bowl of red lentil soup. For another refreshing side, see the cucumber tomato salad with lemon dressing. The chickpeas and feta also make this a convenient light lunch on its own.

Make-ahead and storage

Store the salad in a clean covered container at 40°F (4°C) or below and use within 3–4 days. For the best texture, refrigerate dressing separately and add feta just before serving. Do not leave the salad at room temperature for more than two hours, or more than one hour in very hot weather above 90°F (32°C). Discard leftovers that have been left unrefrigerated too long.

Frequently asked questions

Can I make Greek chickpea salad ahead?

Yes. Chop the vegetables and rinse the chickpeas ahead, then store chilled. Add dressing and feta shortly before serving for the freshest texture.

Do canned chickpeas need cooking?

No. Canned chickpeas are already cooked; drain and rinse them before using.

Can I make the salad without feta?

Yes. The salad is still flavorful with lemon, oregano and olives. Omitting feta also makes the listed recipe dairy-free.

Why is my chickpea salad watery?

Wet chickpeas and juicy cucumbers release liquid. Drain ingredients well and dress close to serving time.

Is this a traditional Greek salad?

No. It is a Mediterranean-inspired chickpea salad using familiar Greek-style ingredients. Traditional horiatiki usually does not contain chickpeas.
