Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 pound (450 g) Yukon Gold or other all-purpose potatoes, diced into 1/2-inch pieces
- 4 cups (about 300 g) broccoli florets, chopped into bite-size pieces
- 3 cups (720 ml) low-sodium vegetable broth
- 1 cup (240 ml) water, plus more as needed
- 1/2 teaspoon dried thyme
- 1/2 teaspoon fine salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh lemon juice, optional
- 2 tablespoons chopped fresh parsley, optional garnish
How to make broccoli potato soup
- Prepare the vegetables. Rinse broccoli under running water and cut into small florets. Scrub potatoes, peel if desired and dice evenly. Chop the onion and garlic.
- Soften the onion. Heat olive oil in a large saucepan over medium heat. Add onion and cook 4–5 minutes, stirring, until translucent.
- Add garlic and thyme. Stir in garlic and thyme for 30 seconds, just until fragrant.
- Cook the potatoes. Add diced potatoes, vegetable broth, water, salt and pepper. Bring to a simmer, cover loosely and cook for 10–12 minutes, until the potatoes are nearly tender.
- Add broccoli. Stir in broccoli florets and simmer for another 6–8 minutes, until the vegetables are fully tender. Larger florets may need longer.
- Make it creamy. Remove the pan from heat. Carefully blend approximately one-third to one-half of the soup with an immersion blender, keeping the blender head submerged. Alternatively, mash some potatoes with a potato masher. Leave some broccoli and potato pieces intact for texture. If using a countertop blender, follow the manufacturer’s hot-liquid safety instructions and work in small batches.
- Adjust and serve. Add more water or broth if too thick. Stir in optional lemon juice, taste for salt and pepper, and garnish with parsley. Serve hot.
Why potatoes make broccoli soup creamy
Cooked potatoes contain starch that thickens liquid when mashed or blended. Using a portion of the potatoes as the base makes a smooth soup without heavy cream. Avoid blending the entire pot for too long, as some potato varieties can become gluey when overworked.
Tips for the best texture
- Dice potatoes evenly: Smaller, similarly sized pieces cook at the same rate.
- Add broccoli later: Broccoli needs less cooking time than potatoes and can become dull and overly soft if boiled too long.
- Blend only part: Keeping some vegetables whole makes the soup satisfying and helps avoid gummy potatoes.
- Adjust liquid at the end: Potatoes absorb broth as the soup sits.

Storage, freezing and reheating
Refrigerate leftovers promptly in shallow covered containers within two hours of cooking. Store at 40°F (4°C) or below and use within 3–4 days. Freeze for up to 2–3 months for best quality, noting that potatoes may soften after thawing. Thaw in the refrigerator and reheat until steaming hot throughout, stirring often. Add a splash of broth if the soup thickens.
Frequently asked questions
Can I make broccoli potato soup without cream?
Yes. Partially blending cooked potatoes naturally thickens the broth.
Can I use frozen broccoli?
Yes. Add frozen florets directly to the simmering soup and cook until tender; the timing may differ slightly.
Do I need to peel the potatoes?
No. Scrub the potatoes well and leave the skin on if you prefer a rustic texture.
Why is my soup too thick?
Potatoes release starch and absorb liquid. Stir in warm broth or water until the soup reaches your preferred consistency.
Can I freeze broccoli potato soup?
Yes, but the potato texture may change. Cool promptly, freeze in portions and thaw in the refrigerator before reheating.
