By : | 0 Comments | On : 23/10/2026 | Category : Christmas Recipes

Cranberry orange muffins bring bright citrus flavor and tart cranberries to a tender breakfast bake. They are a simple addition to a Christmas morning table, but work equally well whenever cranberries are available. The batter comes together without a mixer.

Recipe at a glance

Prep: 15 minutes | Bake: 18–23 minutes | Total: about 40 minutes | Yield: 12 standard muffins | Oven: 375°F (190°C).

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 3/4 cup (150 g) granulated sugar
  • Finely grated zest of 1 large orange
  • 2 large eggs
  • 3/4 cup (180 ml) plain yogurt
  • 1/3 cup (80 ml) neutral oil
  • 1/4 cup (60 ml) fresh orange juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (about 150 g) fresh or frozen cranberries, roughly chopped if large
  • 1 tablespoon flour, for coating cranberries

Allergens: Contains wheat, eggs and dairy. Check packaged ingredients for additional allergens.

How to make cranberry orange muffins

  1. Prepare the oven. Preheat to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease lightly.
  2. Mix dry ingredients. Whisk flour, baking powder, baking soda and salt in a bowl.
  3. Rub zest into sugar. In a separate large bowl, rub orange zest into the sugar with clean fingertips for about 30 seconds to release fragrant oils.
  4. Add wet ingredients. Whisk eggs, yogurt, oil, orange juice and vanilla into the citrus sugar until smooth.
  5. Combine. Fold the dry mixture into the wet mixture until just combined. Do not beat; a few small lumps are fine.
  6. Add cranberries. Toss cranberries with 1 tablespoon flour, then fold them gently into the batter. Frozen cranberries can go in without thawing.
  7. Fill and bake. Divide batter among the 12 muffin cups, filling each roughly three-quarters full. Bake 18–23 minutes, until tops are lightly golden and a toothpick inserted into the cake portion comes out clean or with a few moist crumbs.
  8. Cool. Rest in the tin for 5 minutes, then transfer to a rack to cool further.

Tips for soft muffins

  • Do not overmix: Excess stirring can create a dense, tough crumb.
  • Measure flour carefully: Spoon it into the measuring cup and level, or use a scale.
  • Use fresh orange zest: It adds more orange aroma than juice alone.
  • Keep frozen berries frozen: Thawing can stain the batter and release excess moisture.
  • Check doneness early: Oven temperatures and muffin tin materials vary.

Variations

With dried cranberries

Use 3/4 cup dried cranberries in place of fresh or frozen. The muffins will taste sweeter and less tart.

With nuts

Fold in 1/3 cup chopped walnuts or pecans for crunch. This introduces tree nuts.

Simple orange glaze

Whisk 1/2 cup powdered sugar with 1–2 teaspoons orange juice and drizzle over fully cooled muffins.

With whole wheat flour

Replace up to half the all-purpose flour with whole wheat flour. The muffins may be slightly denser.

Christmas breakfast serving ideas

Serve with fresh fruit, yogurt and warm drinks. For more holiday baking, try soft gingerbread cookies. For another breakfast option, see banana oat pancakes.

Storage and freezing

Cool muffins completely before storing. Keep in an airtight container at room temperature for up to 2 days in a cool environment or refrigerate for 3–4 days. Freeze individually wrapped muffins for up to 2 months for best quality. Thaw in the refrigerator or warm briefly before serving.

Frequently asked questions

Can I use frozen cranberries?

Yes. Add them straight from the freezer and allow a little extra baking time if needed.

Can I make these muffins ahead of Christmas morning?

Yes. Bake the day before or freeze ahead and thaw safely when needed.

Why are my muffins dense?

Overmixing or adding too much flour can make them heavy. Fold just until combined.

Can I use dried cranberries?

Yes, but reduce the amount to 3/4 cup because dried fruit is concentrated and sweeter.

Can I skip the glaze?

Absolutely. The muffins have citrus flavor from zest and juice without any glaze.
