Sheet Pan Chicken and Vegetables (Easy Weeknight Dinner)

Sheet pan chicken and vegetables is a straightforward family dinner with seasoned chicken thighs, roasted potatoes, carrots and broccoli. Everything cooks in the oven, with the broccoli added later so it stays tender rather than overcooked.

Recipe overview

Prep: 15 minutes. Roast: 35–45 minutes. Total: 50–60 minutes. Serves: 4. Oven: 425°F (220°C). Equipment: Large rimmed baking sheet and food thermometer.

Ingredients

  • 4 boneless skinless chicken thighs, about 1 1/4 pounds (570 g)
  • 1 pound (450 g) baby potatoes, halved or quartered
  • 2 medium carrots, cut into 1/2-inch pieces
  • 1 medium broccoli head, cut into florets
  • 3 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon fine salt, divided
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice, optional

How to make sheet pan chicken and vegetables

  1. Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper if desired.
  2. Toss potatoes and carrots with 1 tablespoon olive oil and 1/4 teaspoon salt. Spread in one layer and roast for 15 minutes to give the firmer vegetables a head start.
  3. Meanwhile, pat chicken dry. Toss with 1 tablespoon olive oil, paprika, oregano, garlic powder, 1/4 teaspoon salt and black pepper.
  4. Remove the hot sheet pan carefully and turn potatoes and carrots. Arrange chicken among the vegetables, leaving space between pieces.
  5. Return to the oven and roast for 15 minutes.
  6. Toss broccoli with remaining 1 tablespoon olive oil and 1/4 teaspoon salt. Add broccoli to the pan and roast for another 10–15 minutes, until vegetables are tender and the thickest part of each chicken thigh reaches at least 165°F (74°C). If chicken finishes before vegetables, transfer it to a clean plate and continue roasting vegetables.
  7. Rest chicken for 3–5 minutes. Finish with optional lemon juice and serve hot.

Tips for even roasting

Cut potatoes and carrots into similar-sized pieces, avoid overcrowding the pan and use two baking sheets if necessary. Chicken thickness affects timing, so use a food thermometer rather than color alone. Broccoli needs less time than potatoes, which is why it goes in later.

Variations

With sweet potatoes

Swap baby potatoes for similarly sized sweet potato chunks. Check tenderness early because varieties roast differently.

With zucchini

Replace broccoli with thick zucchini half-moons and add them during the final 10–15 minutes.

With chicken breast

Boneless chicken breast can work, but may cook faster. Check internal temperature early and remove once it reaches 165°F (74°C).

What to serve with it

Serve with Mediterranean white bean salad or no-yeast yogurt flatbread. For another one-pan dinner, see lemon chicken and rice.

Storage and food safety

Refrigerate leftovers in shallow covered containers within two hours, or within one hour if temperatures exceed 90°F (32°C). Store at 40°F (4°C) or below for 3–4 days. Reheat chicken to 165°F (74°C). Avoid cross-contamination: use separate utensils and boards for raw chicken and ready-to-eat vegetables.

Frequently asked questions

Can I use frozen broccoli?

Yes. Add it directly from frozen toward the end, but it may release extra moisture and need a few more minutes.

How do I know chicken is cooked?

Insert a food thermometer into the thickest part and verify at least 165°F (74°C).

Why are my vegetables soggy?

Overcrowding creates steam instead of browning. Use a large sheet pan or divide ingredients between two pans.

Can I meal prep this dinner?

Yes. Cool promptly, refrigerate in individual portions and reheat thoroughly before eating.
