One-Pan Lemon Chicken and Rice (Easy Family Dinner)
One-pan lemon chicken and rice combines juicy chicken thighs, tender rice, garlic and bright lemon in one covered skillet. The rice cooks in seasoned broth, absorbing flavor from the chicken. This is a practical weeknight dinner with minimal cleanup.
At a glance
Prep 15 minutes; cook 35–40 minutes; total about 55 minutes; serves 4. Use a large deep skillet with a tight-fitting lid.
Ingredients
- 4 boneless skinless chicken thighs (about 1 1/4 pounds/570 g)
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 3/4 teaspoon salt, divided, or to taste
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 1 cup (185 g) uncooked long-grain white rice, rinsed and drained
- 1 3/4 cups (420 ml) low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 2 tablespoons chopped parsley, optional
How to make lemon chicken and rice
- Pat chicken dry and season with paprika, oregano, 1/2 teaspoon salt and black pepper.
- Heat olive oil in a deep skillet over medium-high heat. Sear chicken 3–4 minutes per side until lightly browned. Transfer to a plate; chicken will finish cooking later.
- Reduce heat to medium. Add diced onion and cook 3 minutes until softened. Add garlic and stir 30 seconds.
- Stir in rinsed rice and cook for 1 minute, coating grains in the pan juices.
- Pour in broth, lemon juice and zest. Scrape up browned bits and stir in remaining 1/4 teaspoon salt if needed.
- Place chicken on top of the rice. Bring liquid to a gentle simmer, cover tightly, reduce heat to low and cook for 18–22 minutes without frequently lifting the lid.
- Check that rice is tender and the chicken reaches at least 165°F (74°C) at its thickest part with a food thermometer. If rice is firm, add a splash of hot broth and continue covered for 3–5 minutes; check chicken temperature again.
- Remove from heat and rest covered 5 minutes. Fluff rice gently around chicken, sprinkle parsley and serve.
Tips for reliable results
Use long-grain white rice; brown rice needs a different liquid ratio and much longer cooking time. Keep the lid closed to retain steam. Chicken thigh thickness affects cooking time, so use a thermometer rather than judging doneness by color alone. Use a heavy-bottomed skillet to prevent scorching.
Variations
With spinach
Stir a handful of baby spinach into the hot rice after cooking and cover for 2 minutes to wilt.
With peas
Scatter 1/2 cup thawed frozen peas over the rice during the final 5 minutes of cooking.
More lemon flavor
Serve with extra lemon wedges rather than adding too much juice during cooking, which can alter the rice texture.
What to serve with it
Pair with lemon garlic green beans or Mediterranean white bean salad. For another chicken meal, see honey garlic chicken skewers.
Storage and reheating
Rice and chicken require prompt cooling. Transfer leftovers to shallow containers and refrigerate within two hours (within one hour if ambient temperature exceeds 90°F/32°C). Store at 40°F (4°C) or below and use within 3–4 days. Reheat thoroughly to 165°F (74°C), adding a spoonful of water to loosen rice. Avoid repeated cooling and reheating.
Frequently asked questions
Can I use chicken breast?
Yes, but thinner chicken breasts may cook faster and become dry. Check temperature and adjust cooking time.
Can I use brown rice?
Not as a direct swap. Brown rice requires more liquid and a longer cook time.
Why is my rice still hard?
Too much steam may have escaped, or the pan was too hot. Add a little hot broth and continue cooking covered on low heat.
How do I know the chicken is safe?
Use a food thermometer to confirm the thickest part reaches at least 165°F (74°C).
