Chicken Potato Cutlets for Iftar (Crispy Pan-Fried Recipe)

Chicken potato cutlets are a popular make-ahead snack for Ramadan iftar. These golden patties combine fully cooked shredded chicken, mashed potatoes, herbs and spices, then get a crisp coating in a shallow pan. They can be shaped in advance to make the evening meal easier.

Recipe overview

Prep: 20 minutes | Cook: 15–20 minutes | Total: 35–40 minutes (excluding cooking and cooling the chicken and potatoes) | Yield: 12 small cutlets | Serves: 4–6.

Ingredients

  • 2 cups (about 280 g) cooked, finely shredded boneless chicken
  • 2 medium potatoes (about 350 g), boiled, peeled and mashed
  • 1 small onion, finely chopped and squeezed dry
  • 1 green chili, finely chopped, optional
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder, optional
  • 1/2 teaspoon fine salt, or to taste
  • 1 tablespoon fresh lemon juice
  • 1 large egg, beaten, for coating
  • 1/2 cup plain breadcrumbs, for coating
  • 3–4 tablespoons neutral oil, for shallow frying

Allergens: Contains egg and wheat (in standard breadcrumbs). Check seasoning and breadcrumb labels.

How to make chicken potato cutlets

  1. Prepare ingredients. Ensure chicken is thoroughly cooked to 165°F (74°C) before shredding. Boil potatoes until tender, drain thoroughly and mash without added milk. Cool both ingredients promptly before mixing.
  2. Mix filling. Combine cooked chicken, mashed potato, onion, chili, cilantro, cumin, garam masala, chili powder, salt and lemon juice in a bowl. Mix until the mixture holds together.
  3. Shape. Divide into 12 equal portions and form flat patties about 1/2 inch thick. If too soft, refrigerate the mixture for 20 minutes to firm up.
  4. Coat. Dip each patty in beaten egg, then coat lightly in breadcrumbs. Place on a clean tray.
  5. Heat oil. Warm 2 tablespoons oil in a nonstick skillet over medium heat. The oil should shimmer but not smoke.
  6. Pan-fry. Cook cutlets in batches for 3–4 minutes per side until golden and heated through. Add more oil between batches as needed. Because they contain previously cooked chicken, reheat the centers to 165°F (74°C).
  7. Drain and serve. Transfer to a paper-towel-lined plate and serve warm with mint yogurt dip or chutney.

Tips for cutlets that hold together

  • Drain boiled potatoes thoroughly; excess moisture makes patties fragile.
  • Use finely shredded chicken so the mixture binds evenly.
  • Finely chop and squeeze the onion to remove excess water.
  • Chill shaped patties briefly before coating if the mixture feels soft.
  • Turn gently once the underside has formed a golden crust.

Make-ahead and freezer instructions

Shape and coat cutlets, then arrange in one layer on a parchment-lined tray. Refrigerate covered for up to 24 hours before frying, provided the cooked chicken and potatoes have been handled and stored safely. For longer storage, freeze cutlets on the tray until firm and transfer to a sealed freezer bag; use within 1–2 months for best quality. Cook from frozen over moderate heat, allowing extra time, and confirm the centers reach 165°F (74°C).

Variations

Air-fryer chicken cutlets

Lightly oil the coated cutlets and air-fry at 375°F (190°C) for approximately 10–14 minutes, turning halfway, until golden and heated to 165°F (74°C). Air-fryer models vary.

Milder cutlets for children

Omit green chili and chili powder; keep cumin and cilantro for flavor.

Gluten-free coating

Use certified gluten-free breadcrumbs and verify all packaged seasonings.

Serving suggestions for iftar

Serve alongside date milkshake for iftar and a fresh cucumber tomato salad. Keep fried snacks in moderation and include water and other balanced foods at the meal.

Storage and food safety

Refrigerate cooked cutlets in a covered shallow container within two hours, or within one hour in temperatures above 90°F (32°C). Store at 40°F (4°C) or below and eat within 3–4 days. Reheat leftovers to 165°F (74°C). Do not leave chicken-containing snacks on an iftar table for extended periods.

Frequently asked questions

Can I make chicken cutlets a day ahead?

Yes. Shape and coat them, refrigerate covered, and fry the following day.

Why are my cutlets falling apart?

The mixture may be too wet. Drain potatoes and onions well, chill the mixture and handle patties gently.

Can I freeze uncooked coated cutlets?

Yes, provided the chicken inside was already fully cooked and safely cooled. Freeze promptly and cook until hot throughout.

Can I bake instead of frying?

Yes. Brush lightly with oil and bake at 400°F (200°C) for about 15–20 minutes, turning halfway, until golden and reheated to 165°F (74°C).

Are these cutlets spicy?

They are mildly spiced with optional chili. Adjust the heat to taste.
