Greek Lemon Roasted Potatoes (Crispy Oven Recipe)

Greek lemon roasted potatoes combine golden potato wedges with fresh lemon, garlic, oregano and olive oil. The potatoes roast in a shallow layer of seasoned broth, which helps them turn tender before their edges brown. Serve as a flavorful side for chicken, fish or beans.

Recipe overview

Prep: 15 minutes. Cook: 55–65 minutes. Total: 70–80 minutes. Serves: 4–6. Oven: 425°F (220°C).

Ingredients

  • 2 pounds (900 g) Yukon Gold or other waxy potatoes, peeled if desired
  • 1/4 cup (60 ml) olive oil
  • 1/3 cup (80 ml) fresh lemon juice
  • 1 cup (240 ml) low-sodium vegetable or chicken broth
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 3/4 teaspoon salt, adjusted to taste
  • 1/4 teaspoon black pepper
  • Chopped parsley and lemon wedges, optional

How to make Greek lemon potatoes

  1. Preheat the oven to 425°F (220°C). Cut potatoes into similar-sized wedges, approximately 1 inch thick at the widest point.
  2. Place wedges in a large 9-by-13-inch baking dish. Add olive oil, lemon juice, broth, garlic, oregano, salt and pepper. Toss until evenly coated.
  3. Spread wedges in one layer with as much surface touching the pan as possible.
  4. Roast uncovered for 35 minutes, then carefully turn wedges with a spatula. The liquid will reduce as the potatoes soften.
  5. Continue roasting for 20–30 minutes, until a fork slides easily into the centers and the edges are golden. If the pan dries before potatoes soften, add 2–3 tablespoons hot broth. If there is too much liquid near the end, move the potatoes to a rimmed sheet pan and roast briefly until browned.
  6. Rest for 5 minutes, taste and adjust seasoning. Garnish with parsley and lemon wedges.

Tips for crisp edges and tender centers

Use a roomy baking dish so wedges are not piled on top of one another. Avoid cutting very thin pieces, which may break apart before the liquid reduces. Turn only once or twice for better browning. Actual cooking time depends on potato size and the pan.

Variations

Vegan Greek potatoes

Choose vegetable broth rather than chicken broth. All other base ingredients are plant-based.

With fresh herbs

Sprinkle chopped fresh parsley or dill over the finished potatoes. Add fresh herbs after roasting to preserve flavor.

Extra garlic

For a stronger garlic flavor, stir in a small amount of finely minced garlic during the last 10 minutes, watching that it does not burn.

What to serve with them

Pair with honey garlic chicken skewers, Mediterranean white bean salad or Greek chickpea salad with feta.

Storage and reheating

Refrigerate cooked potatoes within two hours in a covered container at 40°F (4°C) or below. Use within 3–4 days. Reheat on a baking sheet at 375°F (190°C) until hot throughout to help restore the edges. Freeze for longer storage if desired, though texture may change.

Frequently asked questions

Can I use russet potatoes?

Yes, but russets can break down more readily. Handle wedges gently when turning.

Why are my potatoes not crispy?

Excess liquid, crowding or insufficient roasting can limit browning. Allow the broth to reduce and give the wedges room.

Can I prepare these ahead?

They are best freshly roasted, but you can reheat refrigerated leftovers in the oven.

Is this recipe gluten-free?

The core ingredients do not contain gluten, but check packaged broth labels and cross-contact requirements.
