Lemon Parmesan Spaghetti (Easy 20-Minute Pasta Recipe)

Lemon Parmesan spaghetti is a bright, quick pasta dish made with fresh lemon, garlic, Parmesan and a silky sauce formed from butter and starchy pasta water. You do not need heavy cream. The key is to add Parmesan off the heat to keep the sauce smooth.

Recipe at a glance

Prep: 5 minutes | Cook: 15 minutes | Total: 20 minutes | Servings: 4 | Equipment: Large pot, wide skillet, tongs, fine grater.

Ingredients

  • 12 ounces (340 g) dry spaghetti
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 3 garlic cloves, finely minced
  • Finely grated zest of 1 medium lemon
  • 2 tablespoons fresh lemon juice, plus more to taste
  • 1/2 cup (50 g) finely grated Parmesan cheese
  • 1/2 teaspoon freshly ground black pepper
  • Salt to taste, plus salt for the pasta water
  • 1/2–1 cup reserved pasta cooking water, as needed
  • 2 tablespoons chopped parsley, optional

How to make lemon Parmesan spaghetti

  1. Cook spaghetti. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package directions until al dente. Reserve 1 cup of starchy cooking water before draining.
  2. Prepare garlic butter. While the pasta cooks, warm butter and olive oil in a wide skillet over medium-low heat. Add minced garlic and cook for 30–60 seconds, stirring, until fragrant but not brown.
  3. Toss pasta. Add drained spaghetti to the skillet with about 1/4 cup reserved pasta water. Toss with tongs for 1 minute until the strands are lightly coated.
  4. Add lemon and cheese off the heat. Turn off the heat. Add lemon zest, lemon juice, Parmesan and black pepper. Toss continuously, adding small splashes of warm pasta water until the sauce is light and glossy. Avoid returning the skillet to high heat, which may cause the cheese to clump.
  5. Serve. Taste and adjust lemon juice, salt or pepper. Finish with optional parsley and serve immediately.

Why pasta water makes a silky sauce

The starch released into pasta water helps the butter and cheese cling to the spaghetti. Add the reserved water gradually: the goal is a glossy coating, not a watery pool at the bottom of the pan. Freshly grated Parmesan typically disperses more smoothly than pre-shredded cheese.

Tips for the best lemon Parmesan pasta

  • Use fresh lemon: Zest adds fragrant citrus oils, while juice provides acidity.
  • Grate cheese finely: Small pieces melt and disperse more readily.
  • Remove from heat before adding cheese: Excessive heat can make Parmesan clump.
  • Reserve enough pasta water: The pasta absorbs sauce as it sits.
  • Serve promptly: This light sauce is best just after tossing.

Easy variations

Lemon spinach spaghetti

Add two handfuls of baby spinach while tossing the pasta and cook briefly until wilted.

Lemon garlic shrimp pasta

Top with separately cooked shrimp that have reached 145°F (63°C) internally.

Extra buttery version

Add one more tablespoon of butter and a little pasta water for a richer coating.

Vegetarian-friendly version

Use a Parmesan-style hard cheese made without animal rennet if following a strict vegetarian diet. Traditional Parmigiano Reggiano is made with animal rennet.

What to serve with lemon spaghetti

Pair this pasta with lemon garlic green beans or a Greek chickpea salad. For a different quick pasta, try garlic butter mushroom spaghetti.

Storage and reheating

Refrigerate leftovers in a covered container within two hours and use within 3–4 days. Reheat gently in a skillet with a splash of water until hot throughout. Add a little fresh lemon juice after reheating if desired. The cheese-based sauce may be less smooth after refrigeration.

Frequently asked questions

Can I make lemon Parmesan spaghetti without cream?

Yes. Butter, Parmesan and starchy pasta water make a light sauce without heavy cream.

Why did my Parmesan clump?

The pan may have been too hot, or the cheese was added too quickly. Remove from heat and toss with warm pasta water a little at a time.

Can I use bottled lemon juice?

Fresh lemon is preferred because this recipe uses both zest and juice. Bottled juice can work in a pinch but has a different aroma.

Which pasta shape works best?

Spaghetti and linguine work especially well, but fettuccine is also suitable. Adjust the water as needed.

Can I make this ahead?

Prepare the garlic and lemon zest ahead, but cook and combine the pasta shortly before serving for the best texture.
